Formerly chef to TRH The Duke and Duchess of Gloucester, chef to TRH The Prince & Princess of Wales and Executive Chef to HRH The Prince of Wales. After 13 years in the Royal Household I moved to Dubai where I established a gourmet food importing business and worked as a consultant to the Jumeirah group of hotels, in particular the '7 star' Burj al Arab Hotel. This was followed by a year as the food editor to 'Time Out Dubai' and 'Time Out Abu Dhabi'. On returning to the UK in 2002 I established my own company - Calla-bash, specialising in event management, catering, product development and consultancy. After two years in California I am now back in Oxfordshire and I am as excited as ever about great, fresh, local, simply prepared food.
